Sally is such an amazing Hostess and an excellent cook. Breakfasts were wonderfully tasteful and very visually appealing. The attention to room detail and special "daily treats" were just remarkable.

Sally has truly dedicated herself to providing a comfortable, relaxing environment; tasteful, well thought-out breakfast menus; and information/education of the surroundings her guests.

I knew the environment of Cactus Cove, with all of the beautiful cactus displays and cactus paintings would be exactly how I imagined my 'Cactus experience' to be.

Staying at Cactus Cove was part of a life experience. Our stay will never be forgotten.

Breakfast

Enjoy our full gourmet breakfast elegantly served in the formal dining room or, if you prefer, more casually outside under our covered veranda by the pool. Breakfast is an excellent time to savor a delicious meal, sip a second cup of coffee, and share thoughts with fellow guests as you plan your day.

Coffee or tea
Choice of juice:  Orange, Grapefruit or Organic Vegetable
Baked pear with yogurt   (recipe below)
Spinach Pie  (recipe below)
Apple cake (recipe below)

Among the variety of breakfast entrées we serve are Huevos Rancheros, Vegetable Frittata, Eggs Neptune, Broccoli Quiche,  French toast, and pancakes. (Recipes are available on request.)

Baked Pear

Ocotillo Silhouette at the Ramada - Cactus Cove3 Pears
1/2 cup brown sugar packed
1 teaspoon ground cinnamon
3 Tablespoon unsalted butter

sprinkle with orange juice.
 
350 degrees  20 minutes.
 
Mix sugar, cinnamon in baking dish.
 
Cut pear lengthwise and remove stem and core.
 
Place pear cut side down
 
Dot with butter
 
Serve immediately with vanilla yogurt.

Spinach Pie

Serves 6

10 oz. spinach, chopped frozen but thawed
½ teaspoon garlic, minced
1 tablespoon onion
16 oz. cottage cheese, small curd
¾ cup Colby cheese, shredded
¾ cup Monterey jack cheese, shredded
3 tablespoons flour
1 tablespoon lemon juice
½ tablespoon salt
5 eggs, beaten
¼ cup butter, melted

Preheat oven to Convection bake 1 hour 325 degrees,  regular over 1 hour 15 minutes. :   

Drain and squeeze the spinach to remove most of the water.

Mince garlic and chop onion.

Mix all the ingredients together except the eggs and butter.

In a separate bowl, beat the eggs and mix with the melted butter.
Pour the egg mixture into the cheese and spinach mixture and combine.

9” pie pan  Spray with Pam, Pour ingredients into pan

1 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup sugar
1 teaspoon ground cinnamon
5 1/2 Tablespoons unsalted butter, room temp.
1 egg, beaten
1/2 cup whole milk
1 medium Granny Apple peeled,  sliced very thin.
 

375 degrees for 30 minutes.
 
Grease 9 inch square baking dish
 
Sift flour, baking powder, salt
In separate bowl combine 1/2 cup of sugar and cinnamon set aside.
 
Electric mixer, cream butter with remaining 1/2 cup sugar.  Beat egg until blended.  Add flour mixture in three additions, alternating with the milk
beating until just combined.
 
Spread half batter in dish.  Lay apple slices on top  Sprinkle apples with half the cinnamon and sugar mixture you set aside
 
Spread rest of batter over apples.  Spread remaining cinnamon and sugar
